Pumpkin Bread with Cream Cheese Frosting

 
Wow! Its been awhile since my last post :( Sorry bout that! Tonight I made pumpkin bread with cream cheese frosting for dessert. I had a couple of pumpkins and made my own puree for some great tasting dishes :)
 
Bread:
1/3 c water
1/3 c vegetable oil
1 c pumpkin puree
2 eggs lightly beaten
1 1/4 c sugar
1 2/3 c flour
3/4 tsp baking soda
3/4 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ginger
3/4 tsp salt
 
Frosting:
8 oz softened cream cheese
1 stick softened butter or margarine
2 tsp vanilla
4 c powdered sugar
 
Preheat oven to 350F and grease a loaf pan. In a bowl mix together water, oil, pumpkin and eggs. In a seperate bowl mix together sugar, flour, soda, cinnamon, nutmeg, ginger and salt. Pour into greased loaf pan and bake for 45-50 min. Blend together crean cheese, butter and vanilla. Gradually add powdered sugar until smooth. Frost baked bread and enjoy! :)

Vegetable beef soup & grilled tuna and swiss on rye

1 16 oz can tomato soup
2 Tbsp Beef base
6 c water
1-2 c frozen mixed veggies
1/4 tsp granulated garlic
1/4 tsp onion powder
Salt to taste
Small can beef chunks if desired

Bring to boil. Let simmer 5 min. Serve

Rye bread
Tuna
Swiss cheese

Put together tuna sandwich and grill. Yummy!!!

Seafood omelet

I forgot to take a pic this morning (oops) but it was so delicious!!!

Beat 2 eggs in bowl. Chop up crab or any type of seafood and put it in the egg pan to warm. Pour eggs over meat to make omelet. Spread cream cheese over half of omelet before plating then fold closed and voila, seafood omelet!

Fried chicken tenders

So good and so easy! Can be a little messy :)

Defrosted chicken tenders
Fryer 400F
1 bowl flour mixture seasoned with spices
1 bowl egg wash (eggs and milk beat together)
Favorite dipping sauces

Coat tenders first with flour, dip in egg wash, then coat with flour again. Fry tenders until they float. Enjoy!

Cheesy chicken and rice bake

1 10.75 oz can Cream of Chicken soup
1 1/3 c water
3/4 c uncooked long grain Rice
1/2 tsp Onion powder
1/4 tsp ground Black Pepper
1 1/2 lbs skinless bonelessChicken breast halves 4-6
1 c shredded Cheddar cheese
* optional* 2 c vegetables

Mix soup, water, rice, onion powder and black pepper in 2qt baking dish. Top with chicken. Cover and bake @ 375F for 45 min or until rice is done. Sprinkle with cheese. *optional* add 2c vegetables to soup mixture before adding chicken.

Makes 4 servings.

This was soo delicious and very filling!

Homemade wheat pancakes

1 large egg
1 C all purpose or whole wheat flour
3/4 C milk
1 Tbsp packed brown sugar
2 Tbsp vegetable oil
3 tsp baking powder
1/4 tsp salt

Beat egg in medium bowl until fluffy. Beat in remaining ingredients until smooth. ( for thinner pancakes add 1-2 Tbsp extra milk ) cook!

I made these this morning and Trenton said they were the best pancakes he's ever had. He may have been blowing smoke but he cleaned his plate!
I started this blog because my husband and I are always posting pictures of food we make on facebook and wanted to have a place to keep all those pics and recipes and be able to share with you all. Please feel free to make suggestions and post your own recipes and/or tips. Trenton knows alot about cooking and has been teaching me many things and I want to continue to learn. He can also help you if you need it. Trenton can cook just about anything whereas my specialty and love is deserts and baking.
